Green Tea and Black Tea: Two Different Plants?
When we order green tea or black tea, we may think they come from different plants. In fact, green tea and black tea are made from the leaves of the same plant, called Camellia sinensis. The most important difference is how the leaves are prepared after they are picked.
To make green tea, the leaves are heated soon after picking, for example with steam or in a hot pan. The heat almost completely stops a natural change in the leaves called oxidation. This change can affect the color and taste of the tea. That is why green tea keeps its color and often has a fresh taste that reminds us of plants.
To make black tea, the leaves are first allowed to lose some water. Then they are rolled or crushed. This allows the air to come into contact more easily with the substances inside the leaves. As oxidation takes place, the leaves become darker and the tea develops a stronger flavor.
White tea and oolong tea are also made from the leaves of the same plant. To make white tea, the leaves are allowed to lose water and then dry. For oolong tea, however, oxidation is stopped before it is complete.
The climate, the soil, and the time when the leaves are picked can also change the taste of tea. That is why even two teas of the same type can have very different aromas and flavors.
